Hojicha stands apart with its roasting process. Unlike steamed teas, Hojicha leaves are roasted at high temperatures, resulting in a reddish-brown colour and a toasty aroma. The roasting reduces caffeine content and bitterness, imparting a nutty and mellow flavour that is often enjoyed in the evening. This variation originated in Kyoto and has become popular due to its smooth and warming qualities.
